blueberry Coffee cake
- 4 cups flour
- 1 1/2 cup sugar
- 1 1/2 tsp salt
- 1 1/2 cup milk
- 2 eggs
- 4 cups blueberries
- 1/2 cup shortening
- 1 tbsp and 2 tsp baking powder
Heat oven to 375 F (200 Celsius). Grease 2 baking pans, 9x9x2. Mix all ingredients except blueberries until moistened. Beat vigorously 1/2 minute. Carefully stir in blueberries. Spread half the batter in each pan; sprinkle topping on batter in each pan. Bake 40-50 minutes. Cool slightly. Drizzle confectioners glaze on top.
Topping: Mix 1 cup sugar, 2/3 cup flour, 1 tsp cinnamon and 1 cup soft butter
Confectioner's Glaze: Mix 2 cup confectioners sugar, 1/4 cup softened butter, 1 tsp vanilla. Stir in 1/3-1/2 cup water about 2 tbsp at a time until glaze is at right spreading consistently.
